Default Overrides Folder and Defaults
I'm currently reorganizing my mods folder and I wonder, should I be putting all default mods into the Overrides folder? I'm not talking about regular mods, just default mods.

As far as I know the main purpose of Override is to override content in the Packages folder. If your defaults are there to override basic game files or files that are installed in DCCache then placing them in Packages should be enough.
An example is when you've installed a Store item as package in Packages and have a mod file that modifies this item. Then this modification goes into Override. If you've installed the item via the Launcher into DCCache then this modification goes into Packages.

Override is the highest level and will affect

Packages
|
ContentPatch
|
DCCache
|
Basic game files

In that order, although I am not too sure about whether DCCache takes precedence over basic game files.
