I've found a number of mods that add a number of body-shape sliders -- Jonha shoulders/waist/hips, Anderson butt/waist-height/posture, and Consort weight/fitness, along with Delphy breast-sliders. I like having more diversity in body-shapes for newly-generated sims. However, I would like to limit the max/min range of the various parameters, to avoid freakish-looking sims. Is there a way for me to do this?

Try changing the slider multiplier to a value you're comfortable with. The easiest way I know of to do it on the fly is to use MasterController, with the CAS integration module, I believe, to control body and facial multiplier slider values. Otherwise, if you're using a slider hack with a set multiple, just choose one with a lower range if you want things more restricted.
