So i started to paint my worlds cliffs with this rock paint and its finished but now decided i would prefer a completely different paint, is it ok to just edit and choose the new texture? or would it be best to delete the layer and and start again ? Sorry if its a dumb question, but with how unpredictable caw is i thought id ask.

No, you can swap the texture. No need to re-paint everything.
